Erythritol is a polyol sweetener produced by glucose fermentation. The glucose-rich raw material is obtained from starch enzymatic hydrolysis. It has 60%–70% of the sweetness of sucrose, featuring excellent heat and acid stability, good digestive tolerance, and a low calorie content of 0.2 kcal/g.
