Functional Applications in Food It serves as a leavening agent, dough conditioner, nutritional fortifier, dietary supplement and yeast nutrient. Dibasic calcium phosphate is available in anhydrous and dihydrate forms. It occurs as a white, odorless and tasteless powder with good air stability. It is practically insoluble in water and ethanol, yet freely soluble in dilute hydrochloric acid and dilute nitric acid.
